Peaches and Cream Nice Cream

Living on the Gold Coast means that even in the middle of Autumn it still feels exactly like Summertime. Due to this, I find myself craving peaches in May. Peaches and cream were also my favourite lolly pre-vegan, so I decided to try and create a nutritious and delicious ice-cream version of this.

Ingredients:

- 2 x frozen bananas.

- 2 x peaches.

- Shredded coconut, muesli, more fruit, chia seeds ect to serve.

Method:

- Freeze the bananas the night before. Make sure you peel and chop the bananas before you freeze them.

- Chop up the peaches into small pieces.

- Put both of the ingredients into a blender/food processor. Put in as much water needed to blend. Whilst the less water you use, the thicker the ice cream will be, it's important You don't strain your blender.

- Serve in bowl with whatever toppings you desire! I recommend shredded coconut and more peach but it's up to you!

This is such a nice meal for breakfast or even an afternoon snack when you need that kick of energy. Not to mention it's a nutritious alternative to ice cream. Enjoy!
